Summary
Current trends indicate that our food production systems will not be able to address the food demands of a growing population.
The UN suggests that, by 2050, global population will reach 10 billion, while the resources available for primary food production remain finite. With current levels of waste and losses reaching 30% of the total produced, this remains an area of focus across the world.
This talk will provide some examples of food waste utilisation that our team has worked for many years, as well as introduce some of our current research activities.
About the speaker:
Professor Costas Stathopoulos joined Murdoch University in July 2024. Prior to joining Murdoch Costas has worked in academia and research in England, Thailand, Ireland, Australia, South Korea, Scotland, UAE and Czechia. Costas’ research is mainly focused on the utilisation and valorisation of waste and by-products streams from the food industry.
Costas has attracted competitive research funding exceeding 25 million dollars, and outputs from his research have been widely published and cited.
